Rice balls are quick, easy and don’t need to be just rice!

I tend to hear alot of “I don’t have time.” well I can tell you YES YOU DO have time and I am going to show you how!!

It does not take long, it just requires you to have a plate, food and a smile!

My lunches I make never take me more than 5 minutes to put together – that includes choosing what they will eat and plating.

Yesterday I used Jasmine rice in the rice cooker – washed,  1 cup rice, 1 ½ cups water – Turn on rice cooker – Done (even washed some dishes while it was cooking.. but shh don’t tell my husband!)

Tuna, Sweetcorn and Mayognaise Rice Balls
1 small can Tuna
1 tablespoon Sweetcorn (I used canned Sweetcorn)
Dollop of Mayonnaise
1 cup Rice (cooled)

Mix all together and shape into a ball. Use a rice mold (or just a plain cookie cutter will do the trick too) to shape it into something special!

This mixture is great to have as a snack hot or cold aswell. Use leftovers for a fried rice, rice balls, rice salad, stuff tomatoes.. the possiblities are endless!

On the Lunch Menu:
Tuna, Sweetcorn and Mayo Teddy Riceball (I use a bear shaped Rice Mold)
Cheese (I used a star cutter)
Watermelon (I used a flower cutter)
Ritz Crackers
Raisins and Apricot Ball
